Lemon Sandwiches

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Roll out the puff pastry very thin and cut into squares.

  2. Place on a baking sheet and spread jam on top, leaving a 1-inch border.

  3. Roll out a second piece of pastry to the same size and moisten edges with beaten egg or water.

  4. Carefully place the second piece over the jam and press edges to seal.

Bake and serve

  1. Brush the top with water and sprinkle with sugar.

  2. Mark into squares with a knife and bake at 400 °F (200 °C) for 20-26 minutes.

  3. Cut while still hot along the marked lines.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Its layers puff up in the oven, giving the sandwiches a flaky, airy texture.
Apricot or peach jam
Provides sweetness and fruity flavour, and its moisture softens the pastry filling as it bakes.
Beaten egg
Seals the edges and browns the pastry surface for a glossy golden finish.

The step that matters

Sealing the edges. If the edges are not pressed firmly, the jam can leak out during baking and the sandwich can open. Moistening the edges helps the two layers bond.

Swap the apricot

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Apricotthe original

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
