What each ingredient does

Whole rice
Starch that softens and thickens into the creamy body of the pudding.
Milk
Liquid that cooks with the rice, giving the pudding its creamy, soft texture.
Eggs
Set when heated, binding the pudding and giving it a firm, sliceable structure.
Sugar
Adds sweetness and helps the pudding brown lightly at its surface.
Butter
Adds richness and fat, and keeps the pudding from sticking to the mold.

The step that matters

Heating the rice and milk slowly. Heating gently while stirring keeps the milk from scorching on the pot base and lets the rice starch release slowly, so the pudding thickens evenly rather than turning lumpy or burnt.

Swap the orange

The recipe marks orange as optional. How well each one fits the dish's main ingredients (rice, milk, sugar, lemon, almond, egg, butter):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Orangethe original

Fit is the average pairing score against rice, milk, sugar, lemon, almond, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
