Ingredients

Directions

Make the custard base

  1. Infuse the lemon rind and bitter almonds in the milk for 1 hour.

  2. Add sugar and isinglass, then boil gently while stirring until the isinglass dissolves.

  3. Skim off any scum, then stir in the cream.

Finish and set

  1. Strain the mixture into a bowl and stir gently until nearly cold to prevent the cream from settling.

  2. Gradually mix in the brandy before molding.

What each ingredient does

Milk
Forms the liquid base that the other flavourings and setting agent are dissolved into.
Isinglass
Gelatine-like setting agent that firms the liquid into a sliceable blanc-mange.
Cream
Adds richness and a smooth, creamy texture to the set dessert.
Sugar
Sweetens the dessert and balances the flavour of the brandy and almonds.
Brandy
Adds alcohol-based aroma and flavour to the finished dessert.

The step that matters

Stir gently while cooling. Stirring the mixture until nearly cold keeps the cream evenly dispersed, preventing it from separating and rising to the top. Adding the brandy only after the mixture has cooled helps preserve its aroma, since alcohol evaporates readily when hot.
