Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard so the pudding holds together when cooked and turned out.
Bread crumbs
Soak up the hot milk and form the body of the pudding.
Milk
Provides the liquid that softens the crumbs and cooks into a soft custard.
Sugar
Adds sweetness and contributes to the pudding's flavor.
Butter
Adds richness and a smooth, tender texture.

The step that matters

Tie the cloth tightly and boil for exactly 1 hour and 10 minutes. A loose cloth lets water seep in and dilute the custard, while overcooking can make the eggs curdle and the texture rubbery. Keeping the water boiling steadily and timing carefully helps the custard set evenly.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, bread, butter, egg):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Parsleyfits less well
  4. Capersfits less well

Fit is the average pairing score against milk, sugar, bread, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
