To Roast Ducks

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the ducks

  1. Remove the feathers, heads, and necks from the ducks, leaving the feet on.

  2. Hold the ducks in boiling water for a few minutes to loosen the skin, then peel it off.

  3. Wash the insides of the ducks with water and wipe the outsides with a dry cloth.

  4. Cut the wings at the first joint and trim the feet behind the backs.

Stuff and roast

  1. Stuff the ducks with a mixture of parboiled onions, minced sage, pepper, and butter.

  2. Roast the ducks at 400°F (200°C), basting constantly.

  3. When the breasts are plump and steam rises towards the fire, serve quickly with brown gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ducks
Provide the main meat, with rich fat that renders during roasting.
Butter
Adds fat and moisture inside the bird and helps browning on the skin.
Onions
Perfume the stuffing and add moisture and gentle sweetness as they soften.
Sage
Adds a savoury, aromatic herbal flavour that suits rich duck meat.

The step that matters

Roast at 400°F (200°C), basting constantly. Duck skin has a thick fat layer that must render and crisp while the meat stays juicy. Frequent basting moistens the surface and helps the skin brown evenly without drying the breast, so the timing and heat need close attention.

Swap the onion

How well each one fits the dish's main ingredients (sage, pepper, butter):

  1. Capsicumfits better
  2. Carrotfits better
  3. Sweet potatofits better
  4. Onionthe original

Fit is the average pairing score against sage, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
