Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg whites
- Whisked eggs thicken the lemon mixture as they heat and set into a soft custard.
- Egg yolks
- Add richness and body, helping the mixture thicken smoothly when heated.
- Sugar
- Sweetens the cream and balances the sharpness of the lemon juice.
- Lemon juice
- Provides the sharp acidity that defines the flavour of the lemon cream.
The step that matters
Stirring over boiling water until thickened. Egg proteins set at moderate heat, so the mixture must be stirred constantly to thicken evenly. Overheating or leaving it unstirred can scramble the eggs into lumps.
Swap the lemon
How well each one fits the dish's main ingredients (sugar, egg):
- Vanillafits better
- Raisinfits about as well
- Lemonthe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
