Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

To Roast Ducks

Ingredients

Directions

Prepare the ducks

  1. Remove the feathers, heads, and necks from the ducks, leaving the feet on.

  2. Hold the ducks in boiling water for a few minutes to loosen the skin, then peel it off.

  3. Wash the insides of the ducks with water and wipe the outsides with a dry cloth.

  4. Stuff the ducks with a mixture of onions, sage, salt, pepper, and butter, if desired.

  5. Cut off the pinions at the first joint and truss the feet behind the backs.

Roast and serve

  1. Spit the ducks firmly and roast them over a brisk fire, avoiding direct scorching.

  2. Baste the ducks constantly until the breasts are plump and the steam draws towards the fire.

  3. Serve quickly with good brown gravy poured around and some in a tureen.

What each ingredient does

Ducks
Provide the meat, whose fat renders during roasting and whose skin crisps as it cooks.
Onions
Add moisture and mild sweetness to the stuffing, perfuming the bird as it roasts.
Sage
Adds a savory, aromatic herbal flavor that complements the rich duck meat.
Butter
Adds fat and richness, helping the stuffing and bird stay moist and browned.

The step that matters

Basting the ducks constantly. Frequent basting keeps the surface moist and helps the skin brown evenly without scorching. Duck has a lot of fat under the skin, so the bird needs steady attention over a brisk fire to cook through and turn golden.
