What each ingredient does

Flour
Provides the main structure that holds the thick batter together while it cooks.
Beef suet
Adds richness and moisture, keeping the pudding tender as the fat melts into it.
Eggs
Bind the ingredients together and help the pudding set as it cooks.
Bread crumbs
Absorb liquid and add body, giving the pudding a softer, more cohesive texture.
Raisins
Add sweetness and chewy texture throughout the pudding.

The step that matters

Stir to a very thick batter. A very thick batter holds its shape inside the cloth while boiling. If it is too thin, the pudding can loosen, spread, or turn heavy and wet, so add milk only as needed for consistency.

Swap the ginger

How well each one fits the dish's main ingredients (flour, bread, beef, raisin, nutmeg, egg, milk):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Gingerthe original

Fit is the average pairing score against flour, bread, beef, raisin, nutmeg, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
