What each ingredient does

Eggs
Bind the mixture and set into a firm, sliceable pudding as they cook.
Bread-crumbs
Soak up the hot milk to form the pudding's soft, absorbent body.
Milk
Provides the liquid that softens the crumbs and cooks into a creamy custard.
Butter
Adds richness and a silky mouthfeel to the pudding.
Sugar
Sweetens the milk and balances the savoury richness of the eggs and butter.

The step that matters

Boil the pudding for exactly 1 hour and 10 minutes. Eggs set as they heat, so boiling too briefly leaves the centre wet and loose, while overcooking makes it tough and rubbery. Keeping the mold tightly covered and the water boiling holds steady heat for an even set.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (milk, sugar, bread, butter, egg, nutmeg, brandy):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits about as well
  4. Lemonthe original

Fit is the average pairing score against milk, sugar, bread, butter, egg, nutmeg, brandy. Candidates are from the same food group and used in at least 100 recipes.
