What each ingredient does

Stale brown bread
Provides the body of the pudding, soaking up moisture and holding the mixture together.
Suet
Adds fat that enriches the texture and keeps the pudding moist.
Eggs
Bind the mixture and set as it cooks, giving the pudding structure.
Currants
Add chewy texture and concentrated sweetness.
Sugar
Adds sweetness and contributes to flavour and browning.

The step that matters

Placing the mixture in a cloth and boiling. The mixture must be wrapped firmly enough to hold its shape but with room to expand, and the water must keep simmering for the full time. Uneven or loose wrapping can let water in and make the pudding soggy or misshapen.
