Boned Quarter of Lamb

Ingredients

Directions

  1. Remove the shoulder from the lamb and bone it.

  2. Stuff the lamb with fine forcemeat and skewer it into a nice shape.

  3. In a pot, melt the butter and braise the lamb with water, stirring until the gravy is drawn.

  4. Cut the brisket into pieces and stew them in white gravy, thickening with cream and eggs until very white.

  5. Cut the long bones into chops and fry them.

  6. Thicken the braise gravy and add haricots and minced truffles or seasonal vegetables.

  7. Place the shoulder in the center of a dish with its sauce, surround it with the brisket covered in white sauce, and arrange the fried chops around the edge.
