To Mash Potatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil the potatoes until thoroughly cooked, then peel them.

  2. Remove any specks and hard lumps from the potatoes.

  3. Mash the potatoes in a wooden bowl or with a fork until fine.

  4. Sprinkle a little coarse sea salt and mix in butter or boiling milk until smooth.

  5. Ensure the potatoes are not too wet to avoid heaviness.

  6. For a finer texture, rub the potatoes through a colander or sieve before adding milk and butter.

  7. If desired, chop boiled onions and capsicums, mix with the mashed potatoes, and shape into a mold.

  8. Warm the shaped mixture in an oven at 350°F (175°C) or on a stove.
