Eel Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Season the eel pieces with salt and pepper.

Assemble and bake

  1. Place the eels in a pie dish, dot with butter, and add a little water.

  2. For variation, add small pieces of rump steak at the bottom of the dish, but do not layer with the eels.

  3. Cover the dish with pie crust.

  4. Bake until the crust is golden and the eels are cooked through.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eels
Provide the main protein, which becomes tender and flaky as they cook through.
Pie crust
Encloses the filling so it steams gently, and browns to a golden finish in the oven.
Butter
Adds richness and moisture, and helps the surface brown as it melts over the eels.
Rump steak
Optional addition that adds meaty flavour to the filling.

The step that matters

Cooking the eels through. Eel is fatty and the pieces must reach a safe, fully cooked internal temperature. Judging doneness by the crust alone can leave the fish undercooked, so check that the flesh is opaque and flakes easily.
