What each ingredient does

Beets
Are the main vegetable; cooking softens their dense flesh until tender throughout.
Melted butter
Adds fat and richness that complements the earthy sweetness of the beets.

The step that matters

Leave the skin and root intact while washing and cooking. Scraping or cutting the beets opens the flesh so color and sugars bleed into the cooking water, leaving the beets pale and less sweet.
