What each ingredient does

Egg yolks
Lecithin in the yolks emulsifies the oil and water, holding the sauce together.
Olive oil
Forms tiny droplets suspended in the yolk, giving the sauce its thick, rich body.
Prepared mustard
Acts as a second emulsifier, helping the sauce stay stable and smooth.
Vinegar
Adds acidity that brightens the flavour and balances the richness of the oil.

The step that matters

Adding the olive oil. If the oil goes in too fast, the yolks cannot disperse it into fine droplets and the emulsion breaks, leaving a greasy, runny sauce. Adding it slowly, a few drops at a time, lets the yolk lecithin coat each droplet and build a stable, thick mayonnaise.

Swap the mustard

How well each one fits the dish's main ingredients (egg, olive, pepper, vinegar):

  1. Capsicumfits better
  2. Cucumberfits about as well
  3. Tomatofits about as well
  4. Mustardthe original

Fit is the average pairing score against egg, olive, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
