Taffy Drops

Ingredients

Directions

Make the taffy

  1. Dissolve the sugar in a pot and bring it to a boil.

  2. Add enough molasses to color the mixture bright yellow.

  3. Cook until it reaches a strong hard crack stage.

  4. Remove from heat and shove in the butter.

  5. Return to heat briefly, shaking the pan in a rapid circular motion.

  6. Repeat until the butter is fully incorporated.

Flavor and shape

  1. Pour the mixture onto a slab and flavor with mace or nutmeg.

  2. Allow to cool without pulling.

  3. Once cool enough, run through a small mould machine or cut into suitable sized lumps with shears.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the sweet base that cooks down into the hard, glossy candy structure.
Butter
Adds fat and richness, softening the texture of the hard candy.
N. o. molasses
Colors the batch bright yellow and adds a deeper, slightly sweet flavor.
Cream of tartar
Acidifies the sugar syrup, helping prevent crystallization for a smoother candy.

The step that matters

Cook to a strong hard crack stage. Sugar must reach the hard crack temperature range to set firm when cooled. Underheating leaves the candy sticky and soft, while overheating can scorch the sugar and give a bitter taste.

Swap the mace

How well each one fits the dish's main ingredients (sugar, cream, molasses, butter):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerfits better
  4. Macethe original

Fit is the average pairing score against sugar, cream, molasses, butter. Candidates are from the same food group and used in at least 100 recipes.
