Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

N. o. molasses
Provides the dark color, rich flavor and chewy body of the taffy.
Sugar
Forms the sweet, light-colored taffy base that is pulled to add air.
Cream of tartar
Acidity that helps keep the sugar smooth and prevents crystallization.

The step that matters

Cooking the molasses to soft crack stage. Cooking to the correct sugar stage controls the final texture. Too little cooking leaves the taffy sticky and soft, while overcooking makes it hard and brittle once cooled.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (molasses, sugar, cream, lemon):

  1. Almondfits better
  2. Pistachiofits better
  3. Chestnutfits better
  4. Nutsthe original

Fit is the average pairing score against molasses, sugar, cream, lemon. Candidates are from the same food group and used in at least 100 recipes.
