Pound Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. In a wooden bowl, beat the powdered sugar and butter until very light and creamy.

  2. Add a few drops of lemon oil or other flavor.

  3. Break in the eggs, two or three at a time, and stir just enough to mix smooth and even without beating.

  4. Sift in the flour and mix just enough to incorporate it evenly.

Bake

  1. Bake in a moderate oven at 350°F (175°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Powdered sugar
Adds sweetness and dissolves into the butter to give a fine, tender crumb.
Butter
Provides fat and richness, and beating it traps air that gives the cake lift and softness.
Eggs
Bind the batter and add structure and moisture as they set in the oven.
Flour
Forms the cake's structure once it is mixed in and baked.

The step that matters

Mixing in the flour. Once flour is added, overmixing develops gluten and makes the cake tough and dense, so it should be mixed only until evenly incorporated.
