Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Sugar
Adds sweetness and helps give the jelly its body.
Lemons
Supply the main flavour, aroma and acidity from the rind and pulp.
Vinegar
Adds a little acidity that brightens the lemon flavour.

The step that matters

Dissolve the gelatine fully before adding it to the hot mixture. Gelatine only sets properly when fully dissolved and evenly dispersed. Lumps or undissolved granules leave weak, uneven patches in the finished jelly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, vinegar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Pineapplefits better
  4. Lemonthe original

Fit is the average pairing score against sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
