Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

Make the filling

  1. Mix the corn starch with a little cream until smooth.

  2. Combine the corn starch mixture with the remaining cream, adding sugar and vanilla to taste.

  3. Beat the egg whites until stiff and fold them into the cream mixture.

Bake and serve

  1. Pour the mixture into a pie crust and bake slowly until set.

  2. Serve very cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness, fat and a smooth, soft body to the filling.
Corn starch
Thickens the cream as it heats, so the filling sets into a firm custard.
Egg whites
Whipped to stiff foam, they add lightness and help the filling set with structure.
Sugar
Adds sweetness and balances the richness of the cream and eggs.

The step that matters

Fold the beaten egg whites in gently. Folding keeps the air bubbles in the whipped egg whites intact, which keeps the filling light. Stirring vigorously would deflate the foam and make the pie dense.
