Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the structure of the batter as its proteins set during steaming.
Baking powder
Releases gas in the batter, lifting the puffs as they steam.
Eggs
Bind the batter and add structure and richness as they set.
Butter
Adds fat that tenderises the crumb and enriches the flavour.
Sweetened cranberries
Add tart fruit flavour and moisture throughout the puffs.
Sugar
Sweetens the sauce and helps it thicken as it boils.

The step that matters

Filling the cups half full. Baking powder keeps raising the batter while it steams, so the cups need room to expand. Overfilling can cause the puffs to spill or turn dense at the top.
