What each ingredient does

Eel
Forms the main body of the dish, and rolling it around the seasonings gives an even spiced layer.
Sage
Adds a savoury, herbal aroma that flavours the eel.
Vinegar
Adds acidity to the poaching liquid and the storage liquid, giving a sharp, tangy flavour.
Mace
Adds a warm, aromatic spice flavour to the rolled eel.

The step that matters

Boil until tender. Eel needs to be cooked through and tender without falling apart. Gentle simmering in the seasoned, acidic liquid cooks the fish evenly while keeping the roll intact.
