Potato Border

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Pare, boil, and mash the potatoes until fine and light.

  2. Add the butter, salt, pepper, and 2 beaten eggs to the potatoes.

  3. Butter a border mold and pack the potato mixture into it.

  4. Let it stand for 10 minutes on the kitchen table.

  5. Turn out onto a dish and brush with 1 beaten egg.

  6. Brown in the oven at 400°F (200°C).
