What each ingredient does

Peaches
Provide the fruit that softens and fills the jars with flavour when cooked.
Sugar
Adds sweetness and balances the tartness of the fruit.
Water
Creates a little liquid in the kettle so the peaches do not scorch while heating.

The step that matters

Heat slowly to a boil. Heating too quickly can scorch the fruit on the bottom of the kettle before the sugar dissolves and the juices form. Gentle heating lets the sugar draw out liquid evenly, so the peaches cook through without burning.
