Why it works: Lettuce and endive match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 284 recipes. Both carry trans-2-hexenal, which smells green, leafy. The science ↓

Lobster Salad

Ingredients

Directions

  1. Wash the salad greens and dry them by shaking in a cloth.

  2. Tear the lettuces and endive, then pour the dressing over them and lightly mix in the small salad greens.

  3. Blend all well with the meat of the lobster.

  4. Pick the meat from the claws, cut it into nice square pieces, and add half to the salad, reserving the other half for garnishing.

  5. Separate the yolk from the white of the hard-boiled egg, chop the white finely, and rub the yolk through a sieve.

  6. Arrange the salad on a glass dish, garnishing with sliced cucumber, pieces of lobster, the egg yolk and white, and beetroot, arranging them in small groups for contrast.
