Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sheep's kidneys
Provide the main meat, which turns tender and firm when quickly sautéed.
Brown sauce
Adds moisture and rich, savoury flavour that coats the sliced kidneys.
Butter or good fat
Conducts heat in the pan and adds richness and browning to the kidneys.
Shallot
Softens in the fat to add a mild, sweet onion-like aroma.

The step that matters

Stir over the heat until thoroughly hot, but do not let it boil.. Kidneys cook quickly and turn rubbery and tough when overcooked. Keeping the sauce just below boiling heats the meat through while keeping it tender.
