Turnips, Boiled
Ingredients
Directions
Prepare
Pare the turnips. If they are very large, divide them into quarters; if small, cook them whole.
Boil and serve
Put the turnips into a saucepan of boiling salted water.
Boil gently until tender, about 18 to 20 minutes for young turnips or 1 to 1.5 hours for old ones. Test for doneness with a fork.
Drain in a colander and serve.

What each ingredient does
- Turnips
- The main vegetable; they soften and turn sweeter and milder as they cook.
The step that matters
Boil gently until tender. Turnip cooking time depends on age and size, so testing with a fork is the only reliable check. Boiling gently keeps the pieces intact while the starches soften evenly.
