What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Veal stock
Provides the main savory flavour and the liquid that becomes the jelly.
Egg white
Clarifies the stock, collecting particles so the aspic turns clear when strained.
Vinegar
Adds a touch of acidity that brightens the flavour and helps the egg white clarify.

The step that matters

Simmer after the boil, then strain until clear. Whisking the egg white through the stock until it boils lets it coagulate and trap impurities. Letting it simmer gently without stirring, then straining through a jelly bag, keeps the aspic clear instead of cloudy.

Swap the celery

How well each one fits the dish's main ingredients (veal, sherry, vinegar, wine, egg, parsley, thyme):

  1. Tarragonfits better
  2. Marjoramfits better
  3. Sagefits better
  4. Celerythe original

Fit is the average pairing score against veal, sherry, vinegar, wine, egg, parsley, thyme. Candidates are from the same food group and used in at least 100 recipes.
