Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Claret
Provides the wine flavour and deep red colour of the jelly.
Leaf gelatine
Sets the liquid into a firm jelly as it cools.
Egg whites and shells
Bind to impurities as they heat, so straining leaves a clearer jelly.
Loaf sugar
Sweetens the jelly and balances the acidity of the lemon and wine.
Lemon juice
Adds acidity that brightens the wine flavour.

The step that matters

Strain through a scalded bag or cloth. The egg whites and shells must be clarified out of the hot liquid. Straining through a scalded cloth keeps the jelly clear and free of cloudiness and debris.

  2. Raisinabout as good a flavor fit
  3. Lemonthe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
