Madeira Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. In a clean bowl, cream together the butter and caster sugar until light and fluffy.

  2. Add the grated lemon rind, egg, and a little milk, and mix well.

  3. Gradually fold in the flour until just combined.

Bake

  1. Divide the batter evenly between two round cake pans lined with greased parchment paper.

  2. Dust the tops with sugar and place thin slices of citron peel on top.

  3. Bake in a preheated oven at 350°F (175°C) for about 1 to 1½ hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air and give a rich, tender crumb.
All-purpose flour
Provides the structure that sets the cake as the batter bakes.
Caster sugar
Sweetens the cake and helps aerate the butter when creamed.
Egg
Binds the batter and adds structure and richness to the crumb.

The step that matters

Folding in the flour. Flour should be folded in gently and only until combined. Overmixing develops gluten, which can make the cake tough and dense.
