Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cashew nuts
Provide the bulk and body of the galantine, holding the roll together when set.
Pine kernels
Add richness and a mild, buttery flavour to the nut base.
White breadcrumbs
Absorb moisture and help bind the paste so it holds its shape.
Small egg
Binds the mixture and helps it set firm during steaming.

The step that matters

Pressing the roll overnight. Pressing under weight while the roll cools compacts the paste and helps it set firm, so it slices cleanly instead of crumbling.

Swap the clove

How well each one fits the dish's main ingredients (pine, cashew nut, garlic, sauce, egg, pepper):

  1. Capersfits better
  2. Cuminfits better
  3. Parsleyfits better
  4. Clovethe original

Fit is the average pairing score against pine, cashew nut, garlic, sauce, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
