What each ingredient does

Potato
Provides the bulk and a soft, light body once mashed and sieved.
Eggs
Egg whites whisked to stiff foam lift the omelet, while yolks add richness and set it.
Butter
Fries the omelet and adds richness and a golden browned surface.
Lemon juice
Adds a small amount of acidity that brightens the flavour of the eggs and potato.

The step that matters

Folding the whites into the potato mixture. Whisked whites trap air in a fragile foam. Folding gently keeps that air in, so the omelet stays light instead of deflating into a dense, flat result.

Swap the potato

How well each one fits the dish's main ingredients (egg, butter, lemon, nutmeg, pepper):

  1. Spinachfits better
  2. Shallotfits better
  3. Asparagusfits better
  4. Potatothe original

Fit is the average pairing score against egg, butter, lemon, nutmeg, pepper. Candidates are from the same food group and used in at least 100 recipes.
