Directions
Infuse and dissolve
Infuse the lemon rind in the milk for about 20 minutes.
Remove the lemon rind.
Add the sugar and gelatine, stirring until the gelatine is dissolved.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Milk
- Forms the body of the jelly and carries the lemon flavour.
- Sheet gelatine
- Sets the liquid milk into a firm, wobbly jelly as it cools.
- Sugar
- Sweetens the jelly and balances the milk.
- Lemon rind
- Adds aromatic lemon flavour infused into the milk.
The step that matters
Stir the mixture as it thickens. Gelatine must be fully dissolved before cooling, and the mixture should thicken evenly without setting in the basin. Stirring occasionally keeps it smooth and stops it from forming lumps or a skin before it is poured into the mould.
