Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Beat the eggs and egg yolks together.

  2. Add the white stock.

  3. Season with salt, pepper, and nutmeg and mix well.

  4. Strain the mixture into a well-buttered tin mold.

Poach

  1. Place the mold in a saucepan with a little boiling water.

  2. Cover the mold with buttered paper.

  3. Poach in a 350°F (175°C) oven for 20 minutes.

  4. Remove the mold.

Cool and serve

  1. Let it cool in a cool place.

  2. Turn out the custard.

  3. Cut it into dice, cubes, or other shapes for garnish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard into a firm, sliceable structure as they coagulate with gentle heat.
Egg yolks
Add richness and smoothness while helping the custard set softly.
Milk
Provides the liquid base and moisture that keeps the custard tender.
White stock
Adds savory flavor to the custard base.

The step that matters

Poach gently in the water bath. Egg proteins set at moderate temperatures, so high heat or boiling can curdle the custard and leave it porous or rubbery. Keeping the water gentle and the oven at the stated temperature gives a smooth, tender set.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, milk, pepper, butter):

  1. Nutmegthe original
  2. Parsleyfits about as well
  3. Cinnamonfits about as well
  4. Tarragonfits less well

Fit is the average pairing score against egg, milk, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
