Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Cod-fish Pie

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the oysters

  1. Remove the gills from the oysters.

  2. Simmer the oysters in a little water for a few minutes.

  3. Strain the oysters.

  4. Mix the oysters with the oyster liquor.

  5. Cut the oysters into 2 or 4 pieces, depending on size.

Assemble the pie

  1. Divide the cod into large flakes.

  2. Place half of the cod flakes in a dish.

  3. Layer the oysters on top of the cod.

  4. Season the oysters with salt, pepper, and a little grated nutmeg.

  5. Add the melted butter sauce over the oysters.

  6. Cover with the remaining cod flakes.

Top and bake

  1. Prepare the short crust pastry as directed.

  2. Season the mashed potatoes with salt and pepper.

  3. Warm the potatoes in a saucepan with a small piece of butter and 2 or 3 tablespoons of milk.

  4. Spread the potato mixture over the fish.

  5. Bake for about 1 hour in a moderate oven at 350°F (175°C).

What each ingredient does

Cod
Forms the flaky body of the pie and provides the main substance of the filling.
Oysters
Add a briny, savoury flavour that seasons the fish filling.
Melted butter sauce
Adds richness and moisture so the fish stays tender during baking.
Short crust pastry or mashed potatoes
Forms the topping that seals in moisture and browns during baking.

The step that matters

Spread the potato mixture over the fish. Covering the fish completely seals in moisture and steam so the cod cooks gently and stays juicy instead of drying out in the oven.

Swap the nutmeg

How well each one fits the dish's main ingredients (oyster, butter, sauce, potato, pepper):
