Sole, with Fine Herbs

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Melt the butter in a sauté pan.

  2. Add the stock, sherry, shallots, parsley, salt, and pepper, and warm gradually.

  3. Wash and skin the sole, then add it to the pan once the mixture is hot.

Bake and serve

  1. Cover the pan and cook in a moderate oven at 350°F (175°C) for 40 minutes.

  2. Just before serving, stir in the anchovy and Harvey’s sauce.

  3. Place the sole on a hot dish and strain the sauce over it.

What each ingredient does

Sole
Forms the main body of the dish, cooking gently in the covered liquid until flaky.
Butter
Adds richness and fat that carries flavour into the sauce.
Stock
Provides the liquid that gently cooks the fish and forms the base of the sauce.
Sherry
Adds acidity and depth of flavour to the sauce.
Shallots
Contribute a mild, sweet onion aroma that builds the sauce's flavour.
Anchovy sauce
Adds a salty, savoury depth that enriches the sauce without tasting fishy.

The step that matters

Cover the pan and bake gently. Keeping the pan covered traps steam so the sole cooks in the surrounding liquid. Cooking at a moderate temperature keeps the delicate fish tender and moist rather than dry and tough.

Swap the shallot

How well each one fits the dish's main ingredients (butter, sherry, parsley, anchovy, sauce, pepper):

  1. Capsicumfits about as well

  3. Carrotfits less well
