Game, in Aspic Jelly

Ingredients

Directions

  1. Rinse a plain mold with cold water.

  2. Cover the bottom with a thin layer of liquid aspic and let it set.

  3. Decorate with stamped-out pieces of ham and egg white, fixing them with a little aspic.

  4. Once the decorations have stiffened, add small pieces of seasoned game, freed from skin and bone.

  5. Leave space to fill with jelly, allowing each layer of game to set before adding another.

  6. Keep the mold on ice or in a cool place until ready to serve.

  7. Turn out and serve.
