What each ingredient does

Isinglass
Gelatin-like setting agent that firms the milk mixture as it cools into a sliceable blancmange.
Milk
Forms the liquid base that the isinglass sets into a soft, creamy custard-like dessert.
Cream
Adds richness and fat, giving the set blancmange a smooth, velvety texture.
Sugar
Sweetens the dessert and balances the richness of the milk and cream.

The step that matters

Simmer gently for 20 minutes. Isinglass is a collagen-based gelling agent that must dissolve fully in warm liquid. Gentle heat dissolves it without boiling off liquid or breaking the setting power, so the blancmange sets evenly.
