What each ingredient does

Egg yolks
Thicken the milk into a smooth custard as their proteins set when heated.
Milk
Forms the liquid base of the custard that the yolks thicken.
Cream
Whipped to stiff peaks, it adds an airy, rich texture to the dessert.
Gelatin
Sets the custard so the dessert holds its shape when chilled.
Caster sugar
Sweetens the custard and balances the coffee flavour.
Coffee essence
Provides the coffee flavour and aroma of the dessert.

The step that matters

Thickening the custard. Adding the yolks to nearly boiling milk while stirring gently sets them into a smooth custard. If the mixture gets too hot or is not stirred, the eggs can curdle or scramble.
