Why it works: Gooseberry and spinach share more aroma than cooks usually use. They rank in the top 4% of all ingredient pairs, and cooks put them together in 18 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

What each ingredient does

Gooseberry purée
Provides the main fruit flavor and tartness, and its pectin helps the cream set.
Vanilla cream
Adds richness and a smooth, creamy texture to the dish.
Lemon juice
Adds acidity that brightens the sweetness of the gooseberries.

The step that matters

Sieve the cooked gooseberries fully smooth. Any skins or seeds left in the purée will give the finished cream a grainy texture. A fine sieve removes them, so the mixture sets evenly and feels smooth on the tongue.
