Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the creamy base that the cream sets from.
Gelatine or isinglass
Sets the liquid cream into a firm, sliceable body when chilled.
Egg yolks
Thicken the cream and add richness and smooth texture.
Lump sugar
Sweetens the cream and balances the sharpness of the lemon.
Lemons
Provide the bright acidity and aroma of the cream.

The step that matters

Pour the mixture back and forth until nearly cold. Egg yolks scramble if they get too hot, so the custard must be cooled gently while it thickens. Stirring while cooling keeps it smooth and evenly thickened instead of lumpy.

Swap the almond

How well each one fits the dish's main ingredients (milk, lemon, sugar, egg):

  1. Milletfits about as well
  2. Almondthe original
  3. Pistachiofits about as well
  4. Walnutfits about as well

Fit is the average pairing score against milk, lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
