Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Claret
Provides the wine base, flavour and deep red colour of the jelly.
Leaf gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Loaf sugar
Adds sweetness and balances the acidity of the lemon juice and wine.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.
Eggs
Whites and shells are whisked in as the liquid heats, collecting particles so the strained jelly runs clear.

The step that matters

Strain through a scalded bag or cloth. Egg whites and shells cling to sediment as the liquid boils and must be filtered out gently; pressing or rushing the straining leaves cloudiness. The bag or cloth must be scalded so the jelly stays clean and sanitary.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  2. Raisinabout as good a flavor fit
  3. Lemonthe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
