Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart flavour and the fruit pulp that gives the jelly its body.
Castor sugar
Sweetens the rhubarb and balances its natural acidity.
Leaf gelatine
Sets the liquid into a firm jelly as it cools in the refrigerator.
Lemon rind
Adds aromatic citrus flavour that brightens the rhubarb.

The step that matters

Strain the gelatine into the mixture while it is still warm. Gelatine must be fully dissolved and evenly mixed before setting; if it cools too much or is not dissolved, lumps or uneven setting can occur, leaving the jelly soft in places.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Marjoramfits better
  4. Rhubarbthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
