Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Line a pie dish with short crust paste.

Make the filling

  1. Cream the sugar and egg yolks together until thick and white.

  2. Add the juice and grated rinds of the lemons, cream or milk, and cake crumbs.

  3. Fold in the stiffly whisked egg whites.

  4. Pour in the mixture.

Bake and serve

  1. Bake for about 1 hour, or until set.

  2. Sprinkle the surface liberally with castor sugar.

  3. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the base and whites, whisked stiff, lighten the pudding so it rises and sets softly.
Castor sugar
Sweetens the pudding and helps the yolks cream to a thick, pale base.
Lemons
Juice and rind provide the acidity and bright lemon aroma.
Cake crumbs
Absorb liquid and add body, giving the pudding a soft, tender crumb.
Cream or milk
Adds moisture and richness, keeping the pudding tender as it bakes.

The step that matters

Folding in the stiffly whisked egg whites. Whites hold air only when whisked stiff; overmixing or deflating them while folding loses lift, leaving a denser pudding with less rise.
