Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Blanch and split the almonds.

  2. Mix all the dry ingredients together.

Make the batter

  1. Warm the butter in a clean bowl, add the sugar, and beat until creamy.

  2. Add the eggs one at a time, beating well after each addition.

  3. Mix in the remaining ingredients thoroughly.

Bake and ice

  1. Pour the mixture into a greased and paper-lined round cake tin.

  2. Bake at 300°F (150°C) for about 14 hours.

  3. Once cooled, cover with white icing and decorate as desired.

What each ingredient does

Flour

Butter
Adds richness and tenderness, and traps air when beaten with sugar.
Eggs
Bind the batter and add structure and moisture to the crumb.
Sugar
Sweetens the cake and helps create a creamy base when beaten with butter.
Baking soda
Helps the cake rise and aids browning in the oven.
