Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat your oven to 400°F (200°C).

  2. Grease the bottom and sides of a baking dish with butter.

Make the custard

  1. Beat the eggs until light.

  2. Stir the beaten eggs into the milk.

  3. Sweeten the mixture to taste.

  4. Add the peach water, lemon extract, or vanilla, and salt.

  5. Pour the custard mixture into the prepared dish.

  6. Grate a little nutmeg over the top.

Bake

  1. Bake in the preheated oven until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard as they cook, giving it structure and a tender body.
Milk
Forms the liquid base of the custard, providing moisture and creaminess.
Sugar
Adds sweetness to balance the eggs and milk.

The step that matters

Bake until set. Eggs thicken as their proteins coagulate with heat. Pulling the custard too early leaves it runny, while overbaking can make it curdle and turn grainy, so watch for a set centre that still wobbles slightly.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, milk, sugar, peach, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Clovefits less well

Fit is the average pairing score against egg, milk, sugar, peach, butter. Candidates are from the same food group and used in at least 100 recipes.
