Scolloped Lobster

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil the lobster, then remove the meat and chop it finely.

  2. Season the lobster meat with pepper, coarse sea salt, Worcestershire sauce or ketchup.

  3. Add vinegar, butter, and enough cream or milk to moisten the mixture.

  4. Place the mixture in a saucepan and bring it to a boil.

  5. Transfer the mixture to a buttered dish and sprinkle bread crumbs or powdered crackers on top.

  6. Bake in a preheated oven at 350°F (175°C) until golden brown.
