Lamb Roasted or Baked

Ingredients

Directions

Prepare and roast

  1. Season the lamb with coarse sea salt and black pepper.

  2. Place it in a roasting pan before the fire and roast, basting frequently with lard.

  3. Alternatively, rub the lamb with lard and place it in a Dutch oven or stove pan with a little water.

  4. Cook slowly until well done; do not parboil as it makes the meat stringy.

Make the sauce

  1. For sauce, mix chopped mint with vinegar and a little sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fore quarter of lamb
Forms the main meat that is cooked slowly until well done.
Lard
Fat that basts the meat and keeps it moist and flavorful while roasting.
Vinegar
Adds acidity that sharpens the mint sauce and balances the sugar.
Sugar
Adds sweetness that softens the sharpness of the vinegar in the sauce.

The step that matters

Do not parboil the lamb. Parboiling before roasting can make the meat stringy, as the record notes. Slow cooking until well done keeps the texture tender and the meat cooking evenly.

Swap the mint

How well each one fits the dish's main ingredients (lamb, pepper, vinegar, sugar):

  1. Cinnamonfits better
  2. Peppermintfits better
  3. Garlicfits better
  4. Mintthe original

Fit is the average pairing score against lamb, pepper, vinegar, sugar. Candidates are from the same food group and used in at least 100 recipes.
