Bemarks on Boiled Puddings
Ingredients
Directions
Prepare a tin mould or a bucket with a tightly fitting lid.
If using a pudding bag, make it 9 inches wide and 18 inches long.
Boil water in a clean pot or kettle.
Scald the pudding bag in boiling water, then dip it in flour.
Pour the pudding mixture into the bag, tying it tightly if it's a simple batter.
If using bread or Indian meal, leave the bag loose to allow for swelling.
Ensure the water is boiling hot when placing the pudding in.
Turn the pudding frequently while boiling to prevent sticking.
Keep additional boiling water ready to add as needed.
When ready to serve, dip the pudding bag in cold water and turn it out onto a dish.
Untie the string and roll back the bag to remove the pudding smoothly.
