What each ingredient does

Fore quarter of lamb
Is the meat being roasted, so its slow cooking sets the dish's main texture.
Lard
Coats the meat during roasting, adding moisture and richness to the surface.
Fresh mint
Adds aroma and fresh flavor to the optional sauce.
Vinegar
Adds acidity that sharpens the optional mint sauce.
Sugar
Adds sweetness that balances the vinegar in the optional mint sauce.

The step that matters

Cook slowly until well done, without parboiling. Slow cooking lets heat penetrate the thick cut evenly, while parboiling draws out juices and flavor. Cooking gently keeps the meat moist and flavorful.

Swap the mint

The recipe marks mint as optional. How well each one fits the dish's main ingredients (lamb, pepper, vinegar, sugar):

  1. Cinnamonfits better
  2. Peppermintfits better
  3. Garlicfits better
  4. Mintthe original
